quinoa pancakes

Ingredients:

1 cup quinoa flour (dry roast quinoa, let it cool, grind to a fine power, sieve to remove lumps) 1 tbsp sugar
½ tbsp baking powder
¼ teaspoon of baking soda
pinch of salt
1 tbsp butter melted
1 cup milk or buttermilk

Mix dry ingredients first, add wet ingredients and stir to make a smooth paste.

Cinnamon Roll Muffins

Ingredients

1 cup almond flour
1 tsp baking powder
1 tbsp cinnamon
1/2 cup nut or seed butter of choice almond butter, peanut butter, sunflower seed butter etc.
1/2 cup pumpkin puree can sub for unsweetened applesauce, mashed banana or mashed cooked sweet potato
1/2 cup coconut oil

For the glaze
1/4 cup coconut butter
1/4 cup milk of choice
1 tbsp granulated sweetener of choice
2 tsp lemon juice
Instructions
Preheat the oven to 350 Fahrenheit and line a 12-count muffin tin with muffin liners and set aside. This can also be made using a mini muffin tin.
In a large mixing bowl, combine your dry ingredients and mix well. Add your wet ingredients and mix until fully incorporated.

Evenly distribute the cinnamon roll muffin batter evenly amongst the muffin liners. Bake for 10-15 minutes, checking around the 10 minute mark by inserting a skewer in the center and seeing if it comes out clean. If it does, muffins are done. Allow to cool in pan for 5 minutes, before transferring to a wire rack to cool completely.
Once cooled, prepare your cinnamon roll glaze by combining all ingredients and mixing until combined. Drizzle over the muffin tops and allow to firm up.

Cheese sauce for Cheese Toast, Pasta, etc

It’s basically a bechamel sauce with cheese and spices

1 tbsp butter
1 tbsp flour (any kind)
1 cup warm milk
1 cup shredded cheese, I used spicy jack
1 tsp mustard powder
1/2 tsp chili powder
Salt, pepper

Heat the butter until melted, add the flour and cook it for about 5 mins until golden brown and raw smell of flour is gone, add the milk slowly stirring constantly to remove any lumps. Keep it on the heat, stir constantly. Once it starts to thicken, add the cheese and spices,keep stirring all the time and allow to thicken.

After the sauce has cooled down a little, toast the bread, spread the sauce on the toast and put it under the broiler for just a few mins until the cheese starts to brown.
