• 1 ½ cup Blueberries
  • 1 cup Cashews (soaked)
  • ¾ cup Dates
  • ½ cup Macadamia Nuts (soaked)
  • ½ cup Cacao Powder
  • ¾ tsp Vanilla Extract
  • ¼ tsp Salt


  1. Blitz all ingredients in a food processor until smooth and creamy. To make good, really creamy, gooey truffles in a food processor requires a pretty decent one. Something like this. If your food processor is lacking power, you’ll probably just end up with a few chunks of dates in the truffles. Nothing wrong with that 🙂
  2. Form into balls and roll in cacao powder.
